An Elegant Side dish...

...according to the Silver Spoon cookbook, are green beans in egg cream.  The recipe from the Silver Spoon cookbook is as follows:

4 1/2 cups of trimmed green beans
3 tablespoons of butter
2 small mild onions, chopped
2 eggs
1/4 cup Parmesan Cheese
salt & pepper

Cook the green beans in salted, boiling water for 15 minutes, then drain and chop.  Melt the butter in a pan over low heat, add the onions and cook, stirring occasionally for 5 minutes.  Add the beans, mix well and cook for a few minutes more.  Meanwhile, beat the eggs in a bowl, stir in the parmesan and season with salt & pepper.  Pour the egg mixture into the pan, stirring constantly, then remove from the heat.  

I consider recipes to be more like guidelines, open to interpretation and improvisation, and so you will see from the photos I made various adjustments.
